Q&A: Looking for a caribbean resort that will accommodate a gluten free diet?

Question by KimK: Looking for a caribbean resort that will accommodate a gluten free diet?
I’m looking for a resort that will cater to a gluten free diet. I have heard that Norwegian cruise lines has been known to be very helpful, but I am looking to go to a resort. Any one have any suggestions or input?! Thanks!

Answer by granny
When calling to make reservations or find out information ask them if they can provide you with your dietary needs BEFORE you make reservations. Fifty/forty years ago resorts didn’t really know what diabetics ate, now the diet is common every where. More and more individuals request a food preference. My son is a vegan, and years ago his hotel/resort food was rather boring and bland, well, that has changed for the better.

Fax, or email a list of what is acceptable to you because because the list of all gluten-free foods can be quite extensive. You can also try to get a deal with the resort if your food is not included in the price and you can purchase the food at a market and they can prepare it for you.

Good luck and healthy eating!!!

Q&A: Has any other Celiac had major diarrhea problems after exposure to air borne wheat?

Question by Angela W: Has any other Celiac had major diarrhea problems after exposure to air borne wheat?
I was taking a Culinary class and had air borne exposure for about
8 weeks of 2 days a week to wheat flour (cake, all purpose) and came down with a bad case of diarrhea for over 5 days, the doctor can’t tell me why, could it be the Celiac disease in the small intestines causing it?

Best answer:

Answer by Anama
Yes, actually it can be if that is your typical reaction to being glutened. If it goes in your nose and then is removed naturally (which means it drips down the back of your nose and then you swallow it), then yes, you can actually get a gluten reaction that way. I have a friend who won’t even go into a local specialty grocery store on certain days because of the flour flying around when they are baking!
Remember, it is only 20 parts per million that renders things no longer gluten free, so based on that, then yep, it could have been the airborne wheat flour. Try to stay totally away from that stuff, okay?

Also, re-check everything you have eaten lately. Sometimes companies throw us a curve and change ingredients or processing plants without letting us know and then we all suffer! I usually go back on whole foods when that happens (a glutening) and slowly add things back in to find out which “gf” food I am eating really isn’t.

Hope you feel better soon!

Have you ever tried a gluten free bakery? If you live in New Mexico, there is a Santa Fe bakery that is gluten free. Gluten is a protein composite found in food processed from grain species such as wheat. Gluten gives elasticity to dough, Santa Fe bakery in that it helps it rise, and to keep its shape. However people with a disorder known as celiac diseases are discouraged from taking gluten, or gluten related food, because their digestion system cannot digest gluten. Therefore, they should eat a gluten free food.

A non gluten bakery is a bakery which removes gluten from cereals such as wheat before baking it to other processed foods such as bread, cakes.

There are many advantages associated with gluten free foodstuffs, one such is that, since many people don’t eat wheat proteins due to some illness and they want to include bread in their diet, the non gluten bakery has eased the burden for them by producing gluten free bread which is healthy to eat for you and your family at large.
