I’m gluten intolerant and vegan, and have been looking for quick snack ideas. Also, I’m trying to lose a couple of pounds, so the healthier the better. 🙂 I have a decent amount of appliances for making snacks; e.g., a blender, a microwave, an oven/stove and a dehydrator, Thanks in advance.

Vegan raspberry squares! enjoy at any time of the day!

1 cups of raspberries (fresh or frozen)
cup of apple puree, homemade and unsweetened
3 tablespoons of agave nectar
tablespoon of vanilla extract
2 cups of rolled oats*
cup of apple puree, homemade and unsweetened
1 tablespoon of baking powder
4 tablespoons of agave nectar
tablespoon of cinnamon
1 dash of vanilla extract
3 tablespoons of sugar
6 tablespoons of water

Process the raspberries with the apple puree, agave and vanilla.
Set aside.
Pre-heat the oven to 180C/350F. Process 1 cup of rolled oats. In
a medium bowl mix the oat flour with the remaining rolled oats
and the rest of ingredients, until it comes together.
Place of the oat mixture on a long oven pan (I used a long, thin
one for portion control), previously spread with non-stick spray.
Spread it out with a spoon to make it as thin as possible. Cook in
the oven for 10 minutes. Remove from the oven (carefully!) and put
the raspberry mix on top. Spread the rest of the oat mix on top
and cook for 20 minutes. Turn the oven to broil and brown for 5
more minutes.
Enjoy them for a breakfast on the go, at tea time or with a tasty
blend of green tee.
* Make sure your oats are certified gluten-free.

All supermarkets & food stores have a gluten free section.Here in Australia it’s generally in the health food aisle.
